cocomojito
The Mojito is a classic cocktail hailing from from Havana, Cuba. Our Cocomojito uses a coconut water white rum which gives this cocktail a touch of coconut with fresh mint, lime juice and a demerara sugar simple syrup. Simple syrup is aptly named because it is simply equal parts sugar and hot water. We use demerara sugar, a minimally processed raw sugar. It is golden brown due to the small amount of molasses that remains after processing the sugar cane and has a slight caramel or toffee flavor which makes it perfect for coffees and cocktails. For more coconut flavor, use a coconut rum or use a white rum for no coconut flavor.
Ingredients
2 oz. Rum Haven (or Coconut Cartel) Coconut Water Rum
3/4 oz. Fresh Lime Juice
3/4 oz. Demerara Syrup
Fresh Mint
Soda Water
Muddle mint and simple in shaker, add ice, rum and lime juice. Shake and strain into a tall glass. Top with club soda. Garnish with lime slice and mint.
