gluten free zucchini fritters

Ingredients

2 medium zucchini, grated
1 1/8 teaspoon sea salt, divided
1 large egg, beaten
Black pepper
1/2 cup gluten free flour blend
1/2 teaspoon baking powder
2 tablespoons extra virgin olive oil

Directions

Grate your zucchini with a box grater or food processor. Place in a bowl and toss with 1 teaspoon salt. Let sit for 10 minutes. This will draw all the water out and allow you to get really nice golden brown fritters.

Wring the zucchini out thoroughly using a clean kitchen towel or cheesecloth. Transfer back to bowl. Add in remaining salt, egg, pepper, flour, and baking powder. Stir to combine well.

Using a medium skillet, heat 2 tablespoons olive oil over medium-high heat. Drop little piles of the batter in and using a spatula, pat them down to flatten.

Cook first side of the fritters for 3 minutes, then flip and cook for another 2-3. Lower the heat if they seem to be browning too quickly. Enjoy as is for a snack or top with smoked salmon or a fried egg for a complete meal! 

Zucchini is abundant in spring and summer and given its mild flavor, is a versatile ingredient in both savory and sweet recipes. It is a great source of fiber and is high in vitamin C, vitamin B6, and potassium.
